Coconut Millet Recipe
Ingredients
1. ½ cup of Barnyard Millet or any other millet of your choice
2. 1 cup of water
3. 2 tablespoons of coconut oil
4. ½ teaspoon of mustard seeds
5. 1 teaspoon of urad dal
6. A few curry leafs
7. 2 tablespoons of cashews
8. 4 medium spicy chillies
9. ½ cup of shredded coconut
10. Two ½ teaspoons of salt
Cooking Instructions
Preparation of Barnyard Millet: Part 1
Step 1: Rinse ½ cup of Barnyard Millet 2-3 times and put it in a bowl
Step 2: Pour 1 cup of water into the bowl that contains the ½ cup of Barnyard Millet
Step 3: Keep the bowl aside for 5-6 hours (Let it soak for 5-6 hours for better digestion)
Preparation of Coconut Mixture
Step 4: Heat a cooking pan (medium flame)
Step 5: Add 2 tablespoons of coconut oil into the pan
Step 6: Add ½ teaspoon of mustard seeds into the pan and let it splutter
Step 7: Add 1 teaspoon of urad dal into the pan and let it splutter
Step 8: Add a few curry leafs into the pan
Step 9: Add 2 tablespoons of cashews into the pan
Step 10: Sauté until the cashews turn brown
Step 11: Add 4 medium spicy chillies into the pan
Step 12: Sauté well
Step 13: Add ½ cup of shredded coconut into the pan
Step 14: Sauté well
Step 15: Add ½ teaspoon of salt into the pan
Step 16: Sauté for 2 minutes until you can smell the aroma
Step 17: Turn off the stove
Step 18: Transfer the coconut mixture from the pan to a plate and keep it aside
Preparation of Barnyard Millet: Part 2
Step 19: Heat the same pan (medium flame)
Step 20: Strain the excess water from the Barnyard Millet bowl
Step 21: Pour the strained water into the pan
Step 22: Add ½ teaspoon of salt into the pan
Step 23: Mix well
Step 24: Cover the pan and wait until the strained water boils
Step 25: Pour the soaked Barnyard Millet into the pan
Step 26: Mix well
Step 27: Cover the pan and cook for 8 to 10 minutes in low to medium flame, until the water is fully absorbed (make sure the millet does not stick to the pan)
Preparation of Coconut Barnyard Millet
Step 28: Pour the coconut mixture into the pan
Step 29: Mix the coconut mixture really well with the cooked millet
Step 30: Turn off the stove
